Protein-packed chickpeas, creamy Greek yogurt, crisp veggies, and fresh herbs come together in a delightful Greek Chickpea Salad. A healthy and satisfying salad for a complete Mediterranean experience. Try out this delicious recipe that is ready in minutes.
- 1 1/2 cups boiled chickpeas
- 1/2 cup sliced onions
- 1/2 cup diced capsicum
- 1/2 cup diced cucumbers
- 1/2 cup cherry tomatoes halved
- 1/2 cup sliced spring onions
- 1/2 tsp salt or to taste
- 1/4 tsp crushed black pepper
- 3 tbsp chopped coriander leaves
- 3 tbsp chopped mint leaves
For the dressing
- 1/2 cup Greek yogurt
- 2 tbsp mayonnaise
- 3 cloves garlic finely chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 3 tbsp chopped dill
- 3 tbsp chopped parsley

To begin, prepare the dressing. In a bowl, mix together Greek yogurt, mayonnaise, garlic, lemon juice, olive oil, dill, and parsley. Mix well and keep aside.

In a larger bowl, add boiled chickpeas, sliced onions, diced capsicum and cucumbers, halved cherry tomatoes, and sliced spring onions. Mix well.

Add the dressing you prepared earlier along with salt and crushed black pepper. Toss until well coated. Check the salt and add more if required.

Refrigerate for at least an hour so that the chickpeas and vegetables soak in the flavors. The Greek Chickpea Salad is ready to enjoy.
- If Greek yogurt is not available, you can use hung curd instead.
