Greek Chickpea Salad Recipe – Mads’ Cookhouse

Protein-packed chickpeas, creamy Greek yogurt, crisp veggies, and fresh herbs come together in a delightful Greek Chickpea Salad. A healthy and satisfying salad for a complete Mediterranean experience. Try out this delicious recipe that is ready in minutes.

  • 1 1/2 cups boiled chickpeas
  • 1/2 cup sliced onions
  • 1/2 cup diced capsicum
  • 1/2 cup diced cucumbers
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup sliced spring onions
  • 1/2 tsp salt or to taste
  • 1/4 tsp crushed black pepper
  • 3 tbsp chopped coriander leaves
  • 3 tbsp chopped mint leaves

For the dressing

  • 1/2 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 3 cloves garlic finely chopped
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 3 tbsp chopped dill
  • 3 tbsp chopped parsley
  • To begin, prepare the dressing. In a bowl, mix together Greek yogurt, mayonnaise, garlic, lemon juice, olive oil, dill, and parsley. Mix well and keep aside.

  • In a larger bowl, add boiled chickpeas, sliced onions, diced capsicum and cucumbers, halved cherry tomatoes, and sliced spring onions. Mix well.

  • Add the dressing you prepared earlier along with salt and crushed black pepper. Toss until well coated. Check the salt and add more if required.

  • Refrigerate for at least an hour so that the chickpeas and vegetables soak in the flavors. The Greek Chickpea Salad is ready to enjoy.

  • If Greek yogurt is not available, you can use hung curd instead.
