New Poolside Restaurant at Fontainebleau Vegas • This Week in Gambling

Fontainebleau Vegas is set to launch its highly anticipated French-Mediterranean dining destination, La Côte, in just a few days.  The new restaurant will be open Thursday April 10th for both resort guests and outside visitors, offering a beautiful poolside setting perfect for breakfast, brunch, and lunch. La Côte, known for its elevated cuisine, will feature an à la carte menu and a three-course prix-fixe lunch offering. Guests can enjoy a variety of light and refreshing dishes, all while overlooking the picturesque Oasis Pool.

“We’re excited to extend the incredible La Côte experience to non-hotel guests this summer,” said Anthony Olheiser, Senior Vice President of Food and Beverage at Fontainebleau Vegas. “Last season, the restaurant was a guest favorite, so bringing Executive Chef Francisco Campa Fuentes’ creative dishes to hotel guests, visitors, and locals will enhance the resort’s renowned culinary offerings. The introduction of our new prix-fixe lunch menu makes it a perfect spot for business travelers or locals looking for a relaxing, upscale dining experience.”

La Côte’s new three-course prix-fixe lunch menu is available for $50 and offers guests a selection of mouthwatering dishes. The first course includes options like the La Côte Caesar Salad or Ahi Tuna Tartare, followed by a second course featuring Egyptian Falafel, Grilled Chicken “Club,” or Chicken Milanese. The meal concludes with a decadent serving of Baklava for dessert. For those seeking à la carte options, La Côte offers a variety of French-Mediterranean inspired dishes, including the Ahi Tuna Niçoise Salad, Blackened Mahi Tacos, and Achiote Marinated Steak Tacos, among others.

Located on the resort’s stunning six-acre Oasis Pool, La Côte will be open Thursdays through Mondays, with the prix-fixe lunch menu served from 11 a.m. to 12:30 p.m. Guests are encouraged to park in the North Valet and use the guest elevators to access the restaurant on level three. Additionally, visitors dining at La Côte, shopping at the resort’s retail spaces, or enjoying treatments at Lapis Spa & Wellness or IGK Salon can take advantage of Fontainebleau Vegas’ valet-validation program, offering a convenient way to validate their valet parking.
