Light and crisp, Apple Cabbage Slaw is a flavorful accompaniment to your meal. Not only is it quick and easy to whip up but also packed with nutrients and antioxidants.
- 2 cups shredded green cabbage
- 1 tsp salt or to taste
- 1 apple diced
- Juice of one lemon
- 1 cup cucumber diced
- 1/2 cup carrot juliennes
- 1/4 cup chopped spring onion whites
- 2 tbsp chopped green coriander leaves
For the dressing
- 1/4 cup curd (or plain yogurt)
- 2 tbsp mayonnaise
- 2 tbsp apple cider vinegar
- 1 jalapeno finely chopped
- 1/2 tsp cumin powder (jeera)
- 1/2 tsp black pepper powder

To begin, add a teaspoon of salt to the cabbage. Mix well, crush it gently, and allow to strain in a colander.

In the meantime, prepare the dressing. In a bowl, mix curd, mayonnaise, apple cider vinegar, jalapeno, cumin powder, and black pepper powder. Keep aside.

Drain the cabbage and place it in a bowl. Add in the diced apples and lemon juice. Mix well.

Add in cucumber and carrots. Mix.

Next, add in the dressing. Toss until well coated.

Finally, add the spring onions and coriander leaves. Toss well.

The Apple Cabbage Slaw is ready. Refrigerate for at least 30 minutes before serving for the flavors to blend.
- Prepping the cabbage with salt enhances its flavors and prevents the dressing from turning watery.
- Tossing diced apples in lemon juice before adding the other vegetables ensures that the apples do not oxidize and change color.
