Moist muffins with the subtle flavor of chamomile and lemons. Chamomile Lemon Muffins are not only delicious but also packed with health benefits. All the nutrition and flavor, without skipping out on the sweetness.
- 2 tea bags of chamomile
- 1/2 cup water
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1/2 cup milk
- 1/4 cup oil
- Juice and zest of 2 lemons

Steep the chamomile tea for 5 minutes in ½ cup hot water. Remove the tea bags and let it cool.

In the large bowl, mix together the dry ingredients – all-purpose flour, granulated sugar, baking powder, baking soda, and salt.

In another bowl, whisk together the wet ingredients – egg, milk, oil, lemon juice, lemon zest, and the brewed chamomile tea.

Now add wet ingredients to the dry ingredients. Mix just until moist and combined. Do not overmix. In the meantime, preheat the oven to 180°C or 375°F.

Grease the muffin moulds with oil. Pour in the batter 3/4 levels. Tap once to remove air bubbles. Bake at 180°C or 375°F for 20 minutes. The baking time varies based on the oven and the size of the muffin moulds.

Check with a toothpick if the muffins are done. It should come out clean. Move to a rack to cool.

The Chamomile Lemon Muffins are ready to enjoy.
- You can use chamomile flowers or loose leaves. The brewed tea needs to be 1/2 cup.
